This week we launch the next instalment in our Smoovy beer series. This series is all about using as much thick, pulpy fruit as we can to create a beer smoothie that is thick, creamy, sweet, and delicious!
Our inspiration for this release is a Mango Margarita cocktail. We brewed up a strong beer base, then added lime peel along with a whopping 800kg of pureed Kensington Pride mangoes. We also added a good dash of salt to help emulate that tangy flavour found in a good Margarita.
In a normal beer, we would ferment the sugars in this fruit, leaving the beer with a lot of mango flavour, but a dry and thin body. However, in our Smoovy beers we skip the fermentation step, so the final beer retains all the sweetness of fresh fruit. In order to prevent further fermentation, we pasteurise the beer by gently heating it up in order to sterilise the beer, and then cool it back down again.
I can safely say that if you are a mango lover, then this beer will be perfect for you. The ripe Queensland mangos are so sweet and delicious, it’s hard to believe this is actually a beer! I highly recommend serving this in true Mango Margarita fashion, with a salted rim and wedge of lime. And if you really want a treat, a shot of tequila, too!
